Ingredients:
1. 200 gms ragi flour 2. 100 gms white raw rice 3. Ghee 4. Salt 5. Water
Procedure:
Ragi Sangati is one of the Traditional Arya Vysya’s Recipe, has its origin from very old time. This is one of the healthiest & tastiest recipes which is suitable for all ages. Ragi is a whole grain that is gluten-free and a staple food in our culture. It’s easy to cook & can fulfill one’s appetite with less calorie & plays a major role in Dietary & health lifestyle. Take one cup white raw rice and grind it coarsely to the size of sooji rava. Pour 5 cups of water and keep it in cooker for 3-4 whistles. Then remove it from the cooker & add one spoon ghee and salt as per taste. Now, Move the mixture to a utensil with heavy bottom & keep it in low flame then pour two cups of water and two cups of ragi flour & mix it once & allow it to settle for 10 minutes. It is necessary to leave the ladle intact inside the mixture, this allows the Ragi to stay cooked at optimum temperature & avoids over cooking. After 10 minutes, we can observe a layer of bluish texture over the surface, this resembles the Ragi is cooked well. Now Our Sangati is almost ready, remove it from the stove, and then allow it to cool for few minutes then convert Sangati into round balls without any lumps & steam it in the cooker for 2 whistles. That’s it our Arya Vysya’s Traditional Ragi Sangati is Ready, serve it hot with few drops of ghee. Puli Kolambu makes an excellent combination to the Sangati.
