Recipe Name: Coriander leaves pickle (Thokku)

Ingredients:
Coriander leaves-1 big bunch, tamarind- 1 cup, chilli powder-2 tbsp , salt -2 tbsp, jaggery-3 tbsp, fenugreek-1/4tsp, cumin-1/4 tsp, mustard -1/4 tsp, sesame oil-1/4 cup
Procedure:
1. Grind coriander leaves into a fine paste. 2. Dry roast mustard, fenugreek , cumin and grind into a fine powder. 3. In a pan pour sesame oil add mustard. After mustard crackle, add ground coriander leaves mixture. Boil it till it becomes a thick texture. 4. Then add tamarind pulp and boil it to a thick paste. And add chilli powder, salt, jaggery and then add the ground roasted powder (from step 2). 5. Cook until oil floats. Have this thokku with hot rice, curd rice, idli, dosai, adai, chappathi etc. This thokku can be preserved until a year when you add more sesame oil.
