Ingredients:
Tropical combo recipe for Perfect Summer.
One of the traditional recipes of Vysas is Rice flour rotti, well side dish varies regionally.
Rice flour roti is easily digestable and subtle tiffen for Vysas.
Sharing with you tangy,spicy sweet flavoured pineapple gojju for Side dish(perfect for summer)
RICE FLOUR
1 cup Rice flour
1.5 cup water
1 tbsp salt, 2 spoon oil.
PINEAPPLE GOJJU 1 cup pineapple 1½ cup water, or as required ¼ cup tamarind juice 5 tsp jaggery ½ tsp turmeric salt to taste
Masala Paste
2 tbsp sesame seeds
3 tsp oil
2 tsp urad dal
½ tsp methi / fenugreek seeds
6 dried kashmiri red chilli few curry leaves ¾ cup coconut, fresh ½ cup water
Procedure:
RICE ROTTI
Bring water to boil and add in oil and salt and add rice flour and mix well.
Let it sit for 10 mins on the stove and turn off the heat.
1.Apply oil and knead the dough smoothly.
2.Then roll on rolling pin,dust with rice flour while rolling.
3.Put the roti on tava and cook on both sides with little oil.
PINEAPPLE GOJJU
Firstly, boil chopped pineapple with water for 10 minutes.
2)Prepare the masala by dry roasting sesame seeds. keep aside
3) Roast urad dal, methi, dried red chilli and curry leaves with a tsp of oil.Blend together.
4)Also add coconut and water.
Blend to smooth paste. keep aside.
5)Add in tamarind juice, jaggery, turmeric and salt to the boiled pineapple.
Cover and simmer for 15 minutes.
now add in prepared masala paste and water as required.Adjust the consistency by adding more water of required.
6)Simmer for another 10 minutes stirring occasionally.Boil until it turns dark brown.
Temper with mustard,curry leaves and hing and pour on the gravy.
