Ingredients:
Kambhu – 1 cup, Idly rice – 1 cup, urad dal + toor dal - 1/3 cup, sambar onion – 10, garlic – 10, coriander + pudina + curry leaves – small amount for taste , mustard + sun dried chilles (mor millagai) – small amount
Procedure:
Recipe: (serves 3 people; makes 15 idly/small adai)
1. On the previous day evening Grind kambhu, idly rice, urad dal + toor dal to a consistency of rava.
2. Add salt as per taste
3. Cut sambar onion and garlic into fine pieces
4. In a kadai , take little cooking oil. Add mustard, sun dried chillies , sambar onion, garlic and roast them till they turn golden brown in color
5. Add this to the ground flour of kambhu, rice and dal
6. The next day morning, this can be either made into adai or idly.
Side dish: Kovakkai (Coccinia) + Garlic Thuvaiyal
1. Cut the kovakkai and garlic (as per taste) into fine pieces
2. In a kadai, add split urad dal, channa dal, red chilles (as per taste) and roast them to golden brown color
3. Add little salt to this and grind them to consistency of chutney
4. For seasoning – use mustard.
