Recipe Name: KAMBU KADHAMBAM- (3 in 1- Idly, Dosai and Upma with same Kambu Batter)

Ingredients:
Dosa Batter: Kambu- 1 cup, Boiled Ponni Rice-1 cup, Thoor Dhal-1 cup (1 cup= 200 gms), Salt- as needed Upma: Cooking oil, mustard seeds-1 Tsp, Urud Dhal- 1 Tbsp, Curry leaves, Green Chillies-10 (finely chopped), Onion-4 (finely chopped), Turmeric Powder-1/2 Tsp, Salt- As needed, Tomato Chutney, Crumbled Kambu Idlies-10 or more
Procedure:
Batter Preparation: Soak the rice and thoor dhal in a vessel also soak the millet (Kambu) in a separate vessel so that impurities can be cleaned easily. Soak time= 4-5 hrs (for all). Grind it coarsely and thicker than the usual Idly batter. Mix it with Salt, let it ferment overnight.
Recipe-1 (Kambu Idly)
You can prepare fluffy idlies using the batter the next day similar to the usual rice idly preparation style.
Serve it hot with Spicy Onion/Tomato- Chutney
Recipe-2 (Kambu Upma)
We'll anyways have leftover idlies for Dinner. But for a change we can make it more tastier by making it as Upma.
Crumble the idlies with hand and keep it aside. Heat a Pan, add around 50 ml cooking oil, add mustard seeds, urud dhal, curry leaves, green chillies. Saute this for few minutes and then add chopped onions. Again saute the mixture until the onion turns golden brown in color. Add turmeric powder and salt. Then add tomato chutney prepared already. Close the pan with a lid and cook it in medium flame for few minutes. You can open the lid and saute when needed. Garnish it with coriander leaves. Serve it hot.
Recipe-3 (Kambu Dosa)
You can prepare crispy dosa with the same Kambu batter and serve it with Tomato/Onion chutney.
