Ingredients:
To Make Dosa: புழுங்கல் அரிசி-2 cup,பச்சரிசி-2 cup,அவல்-1 cup,உளுத்தம் பருப்பு- 1'spn, வெந்தயம்-1 spn. To Make Vada Curry: துவரம் பருப்பு-small Cup,கடலை பருப்பு-small cup,ஜீரகம், ,சோம்பு-1tspn, சிவப்பு மிளகாய்-11 ,pottu கடலை-2tspn, கிராம்பு-2,வெங்காயம்-2,தக்காளி-2,பிரியாணி இலை, எண்ணெய்,கடுகு,பட்டை,மஞ்சள் தூள்
Procedure:
To Make Dosa:
1.Soak everything seperately,while soaking rice add urad dhal and fengrueek seeds.Soak for mini.4 hours.
2.Grind it nicely with salt as required,Leave it for Fermentation
3.Next day we can make soft Dosa.(no need of soda )
To Make Vada Curry:
1.Soak dhal for 2 hours
2.Grind the above mentioned dhal along with 5 red chilli,Cumin Coarsely without water .we can get nearly 20 small vadas for the above mentioned proportion.
3.Fry it in oil and keep aside(donot deep fry).
4.Take a mixi,add fennel seeds,red chilli -6 ,pottu kadalai,cloves-2,grind this nicely
5.Take a pan add oil and add Briyani Leaf,pattai,cloves and add mustard.
6.After it sparkles add green chilly 1, onion and fry it till you get red color,add turmeric and tomato and fry it till u get nice paste.
7.Add a grinded mixture from step 4,saute till the raw smell goes of and add water and salt as required.(Note:Taste the water to make sure the spice and salt level)( put salt carefully, since it's vada recipe soon it ll become higher ,if unnoticed)
8.Let the water boil for some time,now add the vada(you should cut into small pieces before adding).Saute for two minutes.Finally add Coriander leaves!
9.Now the vadaCurry is ready.
