Recipe Name: Traditional Stuffed Bittergourd (koorchina kangarakaaya)

Ingredients:
Ingredients i) Bittergourd (short variety) ii) Basan powder iii) Turmeric powder iv) Chilli powder v) Jeera powder vi) Thaniya powder vii) Turmeric viii) tamarind ix) Onion x) Green chilli xi) Grated mango xii) Grated coconut xiii) jaggery xiv) Salt For tempering xv) Mustard xvi) Jeera xvii) Fenugreek xviii) Curry leaves
Procedure:
• Slit gourds from one side. Remove seeds and chop the seeds. (use small 3inch size gourd and scrape the rough edges, boil some water in a pan, halfboil the peeled bittergourd and keep it aside.
• Add oil in a pan ,add cumin, mustard, jeera, fenugreek and curry leaves for tempering.
• For making mixture after tempering add some finely chopped onion, fry till golden brown, add green chlli. bittegourd skin, gourd seeds, add salt and leave to sauté.
• Next add raw chilli powder, jeera powder, thaniya powder and turmeric powder, grated mango add some grated coconut finally add some basen powder cook till nicely roasted and add required amount of tamarind juice, leave to sauté finally add jaggery for additional taste. Keep some mixture for final finish.
• Stuff these cooked mixture in to the bitter gourd and shallow fry in a medium heat with little amount of oil and changing the sides till well cooked and crispy. Add left over mixture into it and finally mix it properly and leave for some time for final finish. Now your mouthwatering traditional, spicy, tasty dish is ready to serve.
