Recipe Name: Protein rich Kadamba Idly

Ingredients:
For batter: 1. Idly rice - 1 cup 2. Toor dal - 1 cup 3. Moong dal - 1 cup 4. urad dal - 1 cup 5. channa dal - 1 cup 6. salt - as required 7. Lemon juice - 1 tbsp 8. Cooking soda/Eno salt - 1 tsp For tempering: Oil, Mustard, Ural dal, Channa dal, turmeric, asafoetida, dry red chilli, mor milagai, grated coconut, coriander leaves, curry leaves
Procedure:
1. Soak rice & dal for 2 to 3 hours. Grind them together. Consistency should be little coarse, similar to idly batter. 2. Add salt & lemon juice to the batter. No need to ferment the batter. 3. Finely chop dry red chilli, mor milagai, curry leaves & coriander leaves. 4. In a kadai, add oil first. Once it is heated, add mustard, urad dal, channa dal, turmeric, asafoetida, grated coconut, chopped dry red chilli, mor milagai, curry leaves & coriander leaves. Add tempering to the batter & mix well. 5. Add Eno salt to the batter few minutes before making idly. 6. Pour the batter in moulds of any shape & steam it for 10 to 15 mins. 7. Hot & soft delicious protein rich kadamba idly is ready! This goes well with any chutney. Mint & coriander chutney is our favorite. Variation - Add finely chopped vegetables to the batter & make vegetable adai.
