Recipe Name: Ginna Dosai

Ingredients:
1 cup - Dosa batter, 1/4 cup - Thavila pindi kurna ( See notes below on how to prepare thavila pindi kurna), 2nos - Varukkai(Sun dried curd chillies), 1 tsp - Bedalu (Channa dhal), 1/4 tsp - Soda uppu (Cooking soda), Salt, Oil. Special equipment needed for this recipe - Kanchi vessel. Thavila pindi kurna recipe - 1 cup Pachi biyam(Raw rice), 1/4 cup kandippu(Toor dhal). Grind kandippu into fine powder and raw rice into coarse powder. Do not add water,as it’s a dry mix. Once grounded mix it together and thavila pindi kurna is ready. Use 1/4 cup of this kurna for the above recipe.
Procedure:
1) Mix dosa batter, thavila pindi kurna, varukkai, bedalu, salt. Keep it aside for 3 hours to ferment. 2) After 3 hours add 1/4 tsp cooking soda and mix well. 3) Heat kanchi vessel and add 2 tsp oil to it, then pour little batter and cook it in medium flame on both sides. 4) Once it turns crispy and golden our ginna dosai is ready. 5) Serve delicious ginna dosai with sambhara oorkai, chutney and podi. This ginna dosai will be crispy outside and soft and fluffy inside. So everyone will love it. If you like my recipe please do vote me.
