Recipe Name: Tutii Frutii Cake

Ingredients:
Tutti fruit - 1/2 cup, Powdered Sugar - 1/2 to 3/4 cup, Milk - 1/3 cup, Melted butter or refined oil - 1/4 cup, Curd - 1/4 cup (curd should not be sour), Baking soda - 1/2 tspn, Baking powder - 1 tspn, Vanilla essence - 4 to 5 drops
Procedure:
Blend all the wet ingredients together(curd, milk, butter/oil, vanilla essence, sugar) using a wire whisk or a hand blender until fluffy. Seive maida, baking soda and baking powder together. (Dry ingredients) Add the dry ingredients to the wet ones gently. Stir using a spatula while adding the dry ingredients to the wet ones and make sure there are no lumps. (Use cut and fold method of baking). Add the tuttii frutii finally and give it a gentle mix. Brush a cake tin with butter or use butter paper. Add the mixture to the cake tin and give it a tap to break the air bubbles. Preheat pressure cooker without casket and weight for 10 mins. Add salt or sand to the pressure cooker while preheating. Place a cooker stand or a plate inside the cooker and above that place the cake tin. Cake tin should not touch the sides of the cooker. Don't close the cake tin. Close the lid without casket and bake for 30 minutes in low to medium flame. Preheating should be done in low flame. After 30 mins, open the lid of the cooker and insert a knife to see if the cake is baked. If not bake for 5 more mins.
