Recipe Name: Annam Dosai

Ingredients:
1. Pacharisi - 5 cup 2. Pacharisi 1 cup should be boiled and used as cooked rice 3. Curd - 1 cup 4. Salt - As per requirement 5. Cooking soda/Eno - 1 TSP
Procedure:
Method: 1. Soak 5 cups of rice for 3 hours. Now take the other 1 cup rice and cook. Let it come to room temperature. 2. Now grind the soaked rice and the cooked rice together with 1 cup of curd. Let it be smooth. 3. Now add salt and keep the batter aside for a day (min 8 hours) for it to ferment. 4. The next day, add cooking soda/Eno to the batter. Add some water to the batter. The consistency should be like appam batter. 5. You can start making dosas. Add oil to prepare dosa. 6. Cover the dosa and you need not flip the dosa. The dosas can be consumed with spicy Garlic chutney. 7. You can also sprinkle paruppu podi on the dosa for enhanced taste. 8. If there's leftover batter, add onions and make kulipaniyaram. Facts: 1. An apt dosa for travelling long distance as the softness will be present forever. 2. Easily digestible 3. A change from normal dosa. This dosa is of high demand in our family, relatives always ask us to make this during their arrival. This recipe was first tried by my mother in law. Enjoy the dosa!
