Ingredients:
Coconut - 1 full, Tamarind- small piece, Idly rice- 1 tumbler, Urad Dhall - 1/4 tumbler, Red chillies -6, Salt - 1 table spoon, Baking soda- a pinch, Cashew nuts-20, Groundnut -1/4 cup, Turmeric - a pinch, Mustard -1 table spoon, Urad dhall- 2 table spoon, Oil -1 cup, Onion finely chopped- 2, Coriander and curry leaves- hand full.
Procedure:
Take one tumbler idly rice and urad Dhall and soak well for 2 hours. Then take 5-6 red chillies, tamarind water, grated coconut and salt grind them with the soaked rice and grind well to get the idly batter consistency. Now leave the batter overnight. Next day, take the batter and make idlies and cut it into small pieces.
Now, take a pan, heat the pan and add 1 cup oil ,and add mustard, urad Dhall, groundnut, cashew and onion saute well till the ingredients change to golden brown then add small pieces of idly and a pinch of turmeric and mix them well. Now, Sprinkle the coriander and curry leaves. Very delicious and healthy Tenkkai Pulusu Upindi is ready to serve.
You can serve the hot Upindi with cool raita.
