Recipe Name: Kanchi Idli

Ingredients:
Parboiled rice - 1 cup, Raw rice. - 1 cup, Urad dal. - 1 cup, Cumin seeds - 1 tsp, Pepper corns -1 tsp, Dry ginger powder - 1 tsp, Curry leaves - required amt, Oil. - 2 tbsp, Ghee. -2 tbsp, Fresh curd. - 1/3 cup, Salt. - required amt
Procedure:
Soak the rice and dal for about 6 to 7 hrs separately.Now first grind dal in that put dal In grinder correctly after 2 minutes take a hand full of coarsely grinded dal.then again after 2 minutes take a hand full of dal which is grinded a little bit more.now grind the remaining dal softly.after that grind both rice like a small sooji consistency little thickly.then mix all together add saltand keep for fermentation over night.next morning add the rest ingredients and mix well.now the batter is ready to be cooked like idli in tumblers.apply little oil to the tumblers then pour batter till half of the tumbler and cook for about 25 to 30 minutes. Check the idli with tooth pick for full cooking and take it from the tumblers and serve hot with mint chutney,dry coconut podi and spice podi.
