Recipe Name: Sarsal or Idiyappam or Stringhoppers

Ingredients:
Idly Rice /Puzhungal Arisi- 1 cup ,Salt - 1/4 tsp as required Water - required to grind. Grated Coconut - 1/4 cup (optional )
Procedure:
First soak the rice in water for 4 hrs and then grind into fine batter along with salt in mixie/wet grinder.The rice batter should be very smooth. Place it in a cooker or idli cooker and steam them. If they are cooked, start making string hoppers or idiyappam using the traditional machine. If they are ready it can be used to make many varieties. I would like to list the varieties I can in the available space.
Type1: poppyseeds or khus khus payasam With plain stringhoppers
Dry roast 1 cup of poppyseeds, 5 to 6 cashews till you get an aroma in minimal flame. Soak 4 almonds and remove the skin.Cool the mixture and grind them all with chilled water till smooth. Boil the mixture with 2 cups of milk and allow it to boil. Add 1 cup of sugar or jaggery as per your choice.
Type 2: Tamarind
On a pan add gingelly oil, Mustard seeds, curry leaves add puliogare mixture and then plain idiyappam , salt if needed and coriander leaves. Give a nice mix of all these ingredients.
Type 3:
senipappu or pindi Sarsal
Grind 2tbsp roasted Chana dal with 4 dry red chillies and make a fine powder. Place a pan on stovetop, add coconut oil, mustard seeds, curry leaves, chana dhal, Urad dal, idiyappam , add the mixture, salt,
Coriander leaves and give a nice mix.
Type 4: Pappu Sarsal
Pressure cook 4 tbsps of toor dal.
Place a pan on stovetop, add oil, mustard seeds, curryleaves, 4 green chillies, 4 more milagai, smashed toor dhal, salt , a pinch of asafoetida , turmeric,sarsal, grated coconut and coriander leaves. Give a nice mix.
Type 5: lemon Sarsal
Add oil, mustard seeds, curryleaves,
Urad dal, turmeric, a generous pinch of asafoetida, Sarsal , lemon juice, salt, grated coconut, coriander leaves, roasted peanuts (optional)
Type 6: tomato Sarsal
Add oil, mustard seeds, green chillies, onions and fry till translucent. Add chopped tomatoes,sambar powder,red chilli powder, turmeric and salt.Mix well and cook until mushy. Add the idiyappam, coriander leaves and give a nice mix.
